Instructions
Preheat oven to 400°F (205°C) and line a baking sheet with parchment paper.
Slice the sweet potatoes in half lengthwise.
Whisk together the olive oil, maple syrup, cinnamon, salt, pepper, and vanilla extract until fully combined.
Brush or spoon the glaze generously over the cut side of each sweet potato half.
Place the sweet potatoes flat side down on the parchment-lined baking sheet.
Bake for 50–55 minutes, until fork-tender and deeply caramelized on the cut side.
Let cool for 10 minutes before removing from the pan.
Notes
The caramelized crust on the flat side is the best part — don't skip the resting step, or it may stick to the parchment.
