Ingredients
  

For the Dough:

  • 5 cups flour 600 g
  • 2 cups water 400 ml, room temperature
  • 1 teaspoon salt
  • 1 teaspoon yeast

For Greasing:

  • 100 g butter melted
  • 100 ml vegetable oil

For the Filling:

  • cups white cheese crumbled
  • 2 tablespoons fresh parsley finely chopped

Instructions
 

  • Prepare the Dough: In a large bowl, mix flour, salt, and yeast. Gradually add water while mixing until a dough forms.
  • Knead: Knead for 8–10 minutes until smooth and elastic.
  • Rest the Dough: Cover and let rest for a few minutes, then divide into equal portions.
  • Oil Resting: Mix melted butter and vegetable oil. Dip each dough ball into the mixture and let rest in the oil for at least 15 minutes.
  • Prepare the Filling: Combine crumbled white cheese and chopped parsley.
  • Shape & Fill: Roll out each dough ball gently. Add cheese and parsley filling. Fold to seal and flatten slightly.
  • Cook: Cook in a preheated non-stick pan over medium heat until golden brown on both sides (about 3–4 minutes per side).
  • Serve: Serve warm for best flavor and texture.

Notes

  • Resting the dough in oil is essential for soft, flaky layers.
  • You can substitute feta or mozzarella for white cheese.
  • Store leftovers in an airtight container and reheat in a skillet before serving.
