Instructions
Boil the potatoes until fork-tender, then mash with the butter, milk, and salt until smooth. Spread into the bottom of a casserole dish.
Heat a little oil in a pan and fry the diced chicken until golden and cooked through.
Add the onion, garlic, and mushrooms to the pan. Sauté until softened.
Sprinkle in the flour and stir to coat evenly.
Pour in the milk, season with salt and pepper, and stir until the sauce thickens slightly.
Spread the chicken and mushroom mixture over the mashed potatoes.
Sprinkle grated cottage cheese on top.
Bake at 180°C (350°F) until the cheese is golden brown, about 15-20 minutes.
Notes
Store leftovers in an airtight container in the fridge for up to 3-4 days, or freeze for up to 2 months.
