Ingredients
  

For the Chicken Filling

  • 450 g chicken breast
  • 4 g salt ⅔ tsp
  • 3 g onion powder 1 tsp
  • 3 g paprika 1 tsp
  • 2 g cayenne pepper ⅔ tsp
  • 1 g black pepper ⅓ tsp
  • 25 ml olive oil 2 tbsp
  • 25 g red onion finely chopped
  • 30 g pickles finely chopped
  • 75 g mayonnaise
  • 20 g mustard

For Assembly

  • 12 slices sandwich bread
  • Lettuce leaves
  • Cheese slices
  • Cucumber slices
  • Tomato slices
  • Chicken salami
  • Sauce of choice

Instructions
 

  • Heat olive oil in a frying pan over medium heat.
  • Add the chicken breast and season with salt, onion powder, paprika, cayenne pepper, and black pepper.
  • Cook for 8–10 minutes, turning halfway through, until fully cooked.
  • Remove the chicken from the pan and allow it to cool slightly.
  • Shred the chicken using two forks.
  • Transfer the shredded chicken to a large mixing bowl.
  • Add the chopped red onion, pickles, mayonnaise, and mustard.
  • Mix well until creamy and evenly combined.
  • Toast or grill the bread slices until lightly golden.
  • Spread sauce on one slice of bread and top with lettuce and chicken mixture.
  • Place a second slice of bread on top and spread with more sauce.
  • Add lettuce, cheese, cucumber, tomato, chicken salami, and additional chicken mixture if desired.
  • Finish with a third slice of bread.
  • Repeat with the remaining ingredients.
  • Cut each sandwich diagonally and serve immediately.

Notes

  • For extra flavor, chill the chicken filling for 30 minutes before assembling.
  • Whole wheat bread can be used for a healthier option.
  • Adjust the cayenne pepper to your preferred spice level.
  • Store leftover chicken filling in an airtight container in the refrigerator for up to 3 days.
