Preheat oven to 180°C (350°F). Line a baking tray with baking paper.
Place dried dates in a bowl and cover with boiling water. Let sit for 5 minutes to soften. Drain and blend until smooth.
In a large bowl, beat softened butter, brown sugar, and vanilla extract until light and smooth.
Add the egg yolk and mix until fully combined.
Fold in the blended dates until evenly incorporated.
Add flour, baking soda, and ground ginger. Mix until a soft dough forms. Do not overmix.
Roll dough into small balls, then roll each ball in white sugar to coat.
Place on prepared tray, leaving space between each cookie. Lightly press down with a fork.
Bake for 12–15 minutes, or until edges are lightly golden.
Allow cookies to cool on the tray before transferring to a cooling rack. Store in an airtight container.
