- 2½ cups warm water 38–40°C / 100–104°F
- 1 tablespoon dry yeast
- 1 teaspoon sugar
- 4½ to 5 cups all-purpose flour dough should be soft and sticky
- 1 teaspoon salt
In a large bowl, mix warm water, yeast, sugar, flour, and salt until fully combined. The dough should be soft and sticky.
Cover and let rise in a warm place for 20 minutes.
Wet or lightly oil your hands and gently fold the dough over itself to gather it together.
Cover and let rest for 15 minutes.
Repeat the folding process 3 times total, resting 15 minutes between each fold.
After the final fold, let the dough rest for another 15 minutes without folding.
Transfer the dough onto a floured surface and divide into 6 or 9 equal pieces.
Place pieces on a baking tray lined with parchment paper.
Bake in a preheated oven at 200°C (392°F) for 25–30 minutes, until golden brown.
Cool slightly before serving.
