Equipment

Ingredients
  

  • cups warm water 38–40°C / 100–104°F
  • 1 tablespoon dry yeast
  • 1 teaspoon sugar
  • 4½ to 5 cups all-purpose flour dough should be soft and sticky
  • 1 teaspoon salt

Instructions
 

  • In a large bowl, mix warm water, yeast, sugar, flour, and salt until fully combined. The dough should be soft and sticky.
  • Cover and let rise in a warm place for 20 minutes.
  • Wet or lightly oil your hands and gently fold the dough over itself to gather it together.
  • Cover and let rest for 15 minutes.
  • Repeat the folding process 3 times total, resting 15 minutes between each fold.
  • After the final fold, let the dough rest for another 15 minutes without folding.
  • Transfer the dough onto a floured surface and divide into 6 or 9 equal pieces.
  • Place pieces on a baking tray lined with parchment paper.
  • Bake in a preheated oven at 200°C (392°F) for 25–30 minutes, until golden brown.
  • Cool slightly before serving.

Notes

  • The dough should remain sticky — avoid adding too much flour.
  • Use wet or oiled hands when folding to prevent sticking.
  • Bread is done when the bottom sounds hollow when tapped.
