In a large bowl, mix water, baking powder, and salt. Gradually add the flour while kneading until you get a medium-soft dough. Cover and rest for 5 minutes.
Divide the dough into 8 equal pieces and roll each one out with a rolling pin.
Brush each piece with oil, then fold in half.
Brush the top with oil again, add cheese and parsley, then fold to seal completely.
Heat a pan over medium flame. Cook each flatbread slowly, brushing with butter, until golden and crispy on both sides and the cheese is melted.
Serve warm.
Notes
Add the flour gradually — the amount needed can vary depending on the flour type. The dough should be soft but not sticky.
