Dough 300 ml warm milk 1.5 cups 100 ml vegetable oil ½ cup 30 g sugar 2 tbsp 6 g salt 1 tbsp 10 g instant yeast 1 packet 480 –500 g all-purpose flour 4 cups 1 egg yolk for brushing Filling 400 g fresh spinach finely chopped 200 g white cheese feta or similar, crumbled 1 egg white Black pepper to taste Paprika or chili flakes optional
In a bowl, mix warm milk, sugar, and yeast. Let it sit for 5–10 minutes.
Add oil, then gradually add flour and salt. Knead until soft dough forms.
Cover and let rise for 40–45 minutes.
Mix spinach, cheese, egg white, and spices for the filling.
Divide dough into two equal parts and roll out the first layer.
Place on baking tray and spread the spinach filling evenly.
Cover with the second dough layer and seal edges.
Cut from the edges toward the center to form a sun shape.
Brush with egg yolk.
Bake at 180°C for 30 minutes until golden.
You can use feta, mozzarella, or a mix of cheeses.
Make sure spinach is well-drained to avoid soggy filling.
Best served warm.
