Ingredients

For the Dough:

  • 1 cup warm water
  • 1 teaspoon sugar
  • 1 teaspoon instant yeast (or ½ cube fresh yeast)
  • 2 tablespoons olive oil
  • 2 ½ cups all-purpose flour
  • 1 teaspoon salt

For the Garlic Filling:

  • 1 whole head of garlic, finely chopped
  • 3–4 tablespoons olive oil
  • 2 tablespoons softened butter
  • Salt, to taste
  • Black pepper, to taste
  • Crushed red pepper (optional)
  • 2 tablespoons finely chopped parsley
  • 1–1½ cups grated Kashar cheese

Instructions

  • In a bowl, mix warm water, sugar, and yeast. Let sit 5–10 minutes until slightly foamy (if using instant yeast, you can mix directly).
  • Add olive oil, flour, and salt. Knead for 8–10 minutes until smooth and elastic. Cover and let rise for 1 hour or until doubled in size.
  • Lightly sauté the chopped garlic in olive oil over low heat for 1–2 minutes. Do not brown. Let cool slightly.
  • Mix the garlic with butter, salt, black pepper, crushed red pepper, parsley, and some grated cheese.
  • Preheat oven to 230°C (446°F).
  • Divide dough into 3 equal pieces. Roll each into a long loaf shape.
  • Spread the garlic mixture over the top and sprinkle generously with grated Kashar cheese.
  • Bake for 15–20 minutes until golden brown and cheese is melted and bubbly.
  • Let cool slightly before slicing and serving.

Notes

  • Do not brown the garlic to avoid bitterness.
  • Mozzarella can be used instead of Kashar cheese.
  • Reheat in the oven for best texture.
